It seems like under some cicumstances it is not possible to delete glyphs in a .gfs file at all (the "Delete Glyphs..." option is grayed out). However it's not clear to me, why and how I can change it. Update: It seems like Glyphs can't be deleted when TrueType curves are selected. Still not sure if this is a bug or not. Also, master outlines for variable fonts are getting deleted when you change from TrueType to PostScript curves.

I see that you are in Variable Font mode.
Once you create a variable font (ie add an axis to a non-variable font), you will no longer be able to delete glyphs.
In manual: When making a variable font it is important to start with a complete (non-variable) font that represents the default instance. (ie so you wont be altering the glyph shapes or deleting glyphs at this stage anyway).
They Delete Glyphs function is disabled for a variable font, but I notice that it is not always greyed out in these cases - so will fix that in the next update.
