I add 'alignment zones' and set 'stem widths', but hinting does not show in 'font options': And does not show in 'Glyph information' ( PostScript hinting: none ): 'alignment zones' and 'stem widths' what I set is saved in font file ('.gfs' and '.otf' too), but hinting does not work. (Windows 7/64; Type 3.2.040; font file PostScript metrics)

Yes, the alignment zones and stem widths will not affect the hinting option in font options (please see the manual page 34 for more information about font options). The main reason for this is that you can easily edit these in Type 3.2, but not other types of hinting - which you can remove independently.
Glyph information will show glyph hinting info for the current glyph only - not global hinting.
What do you mean when you say the 'hinting does not work'? This is not full-hinting, but it is possible to see that the glyph heights will now remain consistant at very small point sizes. It is also the first step in applying full Adobe autohinting as shown in the manual (page 31).
Note: The alignment zones and stem widths are a feature of .otf postscript fonts only - so will not appear in ttf fonts.
